pico ingredients
- 4 vine tomatoes
- 1/2 white onion
- 2 small hot peppers (jalepeƱo, serrano, etc)
- fresh cilantro
- 3/4 lime juice
carrots
- shredded carrots
- spices: oregano, rosemary, cumin, salt
- liquids: water, vinegar
other ingredients
- rice
- 1/4 lime
- canned black beans
- taco seasoning
- frozen shrimp or avocado
- garlic powder
- oil
steps
- cook rice
- adding 1/4 of a lime's worth of juice to the rice
water
- prepare pico de gallo
- set aside (can be refrigerated)
- prepare quick-pickled carrots
- set aside (can be refrigerated)
- add canned black beans to small pot on
- medium heat
- add taco seasoning
- once it boils, drop to simmer
- prep and cook frozen shrimp
- defrost under running water for 10 minutes
- dry using paper towel
- heat pan over medium heat
- add a bit of oil
- add shrimp one by one
- sprinkle garlic powder and taco seasoning
- cook for ~3 minutes, then stir
- if they start to stick or the spices start to burn,
splash water
- cook for ~3 minutes, then transfer to a bowl
