- mince garlic
- large slices of ginger
- heat wok to liedenfrost
- aromatics for around 20 seconds
- add pork
- salt
- red pepper
- black pepper
- a little hoison sauce
- stir until it's mostly cooked
- check by firmness
- add the white stems first
- stir until cooked, adding a little salt and rice vinegar
- cover for ~5 minutes, until the white parts of the cabbage are translucent
- add cabbage greens until soft (around 1 minutes, 30 seconds)
