  1. mince garlic
  2. large slices of ginger
  3. heat wok to liedenfrost
  4. aromatics for around 20 seconds
  5. add pork
    1. salt
    2. red pepper
    3. black pepper
    4. a little hoison sauce
  6. stir until it's mostly cooked
    1. check by firmness
  7. add the white stems first
  8. stir until cooked, adding a little salt and rice vinegar
  9. cover for ~5 minutes, until the white parts of the cabbage are translucent
  10. add cabbage greens until soft (around 1 minutes, 30 seconds)
